Ingredients
* 1 head garlic, minced .
* 1/4 c white vinegar .
* 1/2 tsp oregano .
* 4 tbsps soybean paste .
* 2 lbs pork butt, cubed (combination of lean meat & fat) .
* 1/4 c light soy sauce .
* 3 c of sweetened pineapple juice .
* 2 pieces bay leaves .
* 1 tbsp oil .
* 1/4 c brown sugar .
* 1 c of ground peanuts .
* salt & pepper .
* 1 medium onion, sliced
Directions
* Step #1 In a large pot or casserole, sautee garlic & onion, add the pork cubes & brown on all sides.
* Step #2 Brown in batches if necessary.
* Step #3 Return the brown pork pieces to the pot, garlic, salt & pepper, add pineapple juice,vinegar, soy sauce, oregano,sugar & bay leaf.
* Step #4 Cook & let simmer for 1- 2 hrs over med-heat/flame or until the pork is tender.
* Step #5 Keep adding liquids (water, stock or pineapple juice) if necessary.
* Step #6 Add in soybean paste & ground nuts & cook this until sauce thickens.
* Step #7 Serve hot.
