Kaldereta came from the Spanish word “caldereta”, which means cauldron or simply, cooking pot. Most articles refer to the Spanish stew when the word “caldereta” is being mentioned. Though originally red lobsters were used in making this dish, people who introduced this wonderful dish to the Philippines may have only meat options when he made one.

This cuisine was introduced by the northern provinces of the Philippines with the use of goat meat. And in some old stories, the beef, which today became a normal meat for the dish, was used to introduce a different version of it by the people from the Katagalugan. And true enough, a lot of versions of Kaldereta were already in the market, making it more attractive and interesting.
